Vegan Overnight Oats

My new favorite breakfast: cold oatmeal!

I know, this sounds so weird. It sounded weird to me too, but then I saw this post (holy crap! beautiful!).

Basically, overnight oats are oats soaked in milk (plant milk, to make them vegan) overnight in the fridge. In the morning, you take them out and add toppings and voila! A parfait-like treat. For me, I think of it like the oats are a substitute for yogurt, a base for toppings.

Of course, being the slacker that I am I had to modify the recipe so that it’s dead-simple. No fancy-layered parfaits for me.

The Slacker’s Vegan Overnight Oats

Ingredients:

  • 1/4 cup plant milk, such as coconut or hemp
  • 1/4 cup oatmeal flakes (I like quick-cookingbest but you could use regular as well)

Directions:

Mix the oatmeal and milk together in a pretty jar, cover and place in fridge overnight.

Toppings:

The possibilities are endless! My favorite combination (pictured above) is a layer of granola, sprinkling of cacao nibs, and fresh strawberries. Other ideas include: blueberries, hemp seeds, super cookies, nuts of any kind (almonds, cashews, walnuts!), bananas, raisins, the list goes on…

Variations:

Obviously, if you want more oats just increase the milk and oats amount. This one is pretty easy to modify. I also like to add some chia seeds or quinoa (or both!) to the oats to raise the nutrient profile.

Hey lady!
I spent all day reading the China Study and Nourashing Traditions. I really want to work on improving my diet. These two books offer contrasting viewpoints on what constitutes best practices in eating but both focus on organic whole foods. Some of my siblings are doing NT and they look fantastic and their kids practically glow but it involves wired practices like organ meats and raw milk. I decided I want the Eileen easy peasy way to quit eating junk. First step green smoothies every day. Interestingly soaking oatmeal overnight is a NT technique. Do you eat the oatmeal in addition to the smoothie?

this is one of my favorite summer breakfasts, but i use extra thick rolled oats so that they maintain their texture more, and i just soak them in water! it’s a fabulous, sweet, cooling breakfast with only fruit and nuts on top. YUMMY!
